CCD is a coffee project based in the heart of Boquete, Panama’s renowned coffee growing region. It operates as both a business and a forward thinking collaborative initiative, dedicated to elevating the region’s coffee quality. By utilizing experimental fermentation techniques and producing cutting edge specialty coffees, CCD aims to add meaningful value to the broader local industry. This innovation is supported by state of the art milling facilities designed for precise, extended drying and controlled fermentation.
This lot is a Geisha varietal processed using the Intrinsic Cherry method. In this process, whole cherries are fermented anaerobically with their full fruit intact, allowing the coffee’s natural sugars, yeasts and microbiome to drive an intensified, internalized fermentation. This enhances sweetness, elevates complexity and accentuates the varietal’s floral and fruit-forward characteristics. For this coffee, the anaerobic fermentation lasted 68 hours, followed by 468 hours of carefully managed drying to stabilize and refine the final cup profile.
