This varietal is a Green Tip Gesha Varietal from Panama that was given to Prakash and Mohan at Riverdale Estate from Nathan from Cartel Coffee Roasters.
The gesha plants took approx 3 years to begin yielding any fruit and this crop is now on its 5th year/season.
The Natural Carbonic Maceration (NCM) process is a relatively new and innovative processing method in the coffee industry. It involves placing freshly harvested coffee cherries in a sealed container filled with carbon dioxide (CO2) gas for a period of 24 to 48 hours before the cherries are pulped and dried.
During the NCM process, the CO2 gas replaces the oxygen in the container, creating a low-oxygen environment that induces a natural fermentation process within the coffee cherries. The fermentation process breaks down the fruit’s sugars, resulting in unique flavor profiles and aroma notes in the final cup of coffee.
The NCM process is known for producing coffees with distinct fruity and floral notes, as well as enhanced sweetness and complexity. It is also believed to result in a cleaner cup, as the low-oxygen environment reduces the risk of undesirable bacterial growth and off-flavors.
The NCM process was first developed and popularized in Costa Rica by the coffee processing company, APROCAFE, and has since been adopted by other specialty coffee producers around the world. However, due to the specialized equipment and controlled environment required for the process, NCM coffees tend to be more expensive than other processing methods.
I have bought this coffee now for the second time and it’s still awesome! Seriously folks, do yourself a favour and try it, you won’t regret it. I vacuum seal it in 10g portions, then freeze it. I grind it frozen with a Comandante C40 Mk4 and more recently brew it using a Hario Switch. Brilliant.
I loved the balance of this coffee, I made it with a V60 using 4:6, very satisfied with it.
Exactly as described… clean, smooth and full of dark fruit flavours. The Natural Carbonic Maceration process has really pulled out the best in this coffee. I recommend freezing it and taking it out on a rainy day!!
