The cherries are carefully selected and handpicked. After the cherries arrive at the wet mill, they undergo a pre-fermentation process in sacks. Then, the coffee is transferred to the reception tank and passes through the siphon, where damaged cherries and foreign materials float and are removed. After that, the coffee is passed through a screen where it is sorted by size before being moved to the drying patio, where the cherries are dried for 14 to 17 days.
