Pitalito is the first coffee municipality in Colombia and in its wide area it still has a lot to offer in terms of quality, varieties and processes. Part of the farm constitutes a reserve of 35 Ha of native forest. Only people of the region works in the farm. In this moment the farm is in process of organic certification
Farm / Estate Processing Techniques:
The cherries are picking at the optimum point of ripening. Fermentation is in plastic tanks for 12 hours and then are pulping. Finally are sun dried in solar parabolic for 15 to 25 days.
