Farm or Region History / Background:
Pitalito is the first coffee municipality in Colombia and in its wide area it still has a lot to offer in terms of terrior. The field work is mostly carried out with family and neighbours of the farms. This area traditionally has been a coffee production zone and has gained a reputation for high quality well processed coffee both domestically and overseas.
Environmental / Sustainability Initiatives, Social Development, Community Development:
Part of the farm constitutes a reserve of 35 Ha of native forest. Only people of the region works in the farm. In this moment the farm is in process of organic certification
Farm / Estate Processing Techniques:
The cherries are picking at the optimum point of ripening. Fermentation is in plastic tanks for 12 hours and then are pulping. Finally are sun dried in solar parabolic for 15 to 25 days.
