NOTES: GRAPEFRUIT, GUAVA, STONEFRUITS AND CARAMEL

Cherries for this microlot were picked following strict ripeness criteria. Cherries were later pulped and exposed to 35 hours of dry fermentation. Later, the cherries were placed on raised beds for 11 days until 10% moisture content was reached. This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.This coffee was produced by indigenous growers from Aponte, Nariño who are members of La Cooperativa de Cafes Especiales de Nariño. Producers contributing to this project grow coffee above 1700 m.a.s.l and their farms range in size between 0.5-1.5 hectares. in Aponte, producers have mastered the art of Honey processing as they have been producing Honeys for 4 consecutive years now.
