This expressive anaerobic natural comes from the Lalesa site in Gedeb, Yirgacheffe, and is produced by Eptah Specialty Coffee. Ripe Heirloom cherries are sealed in barrels for nine days of oxygen-free fermentation before being dried slowly on raised beds for up to eighteen days.
The extended fermentation builds a layered cup with tropical fruit, citrus brightness, rich cacao and warming spice. Grown beneath the shade of false banana trees at 2,150–2,200 metres above sea level, this is a distinctive Ethiopian release with depth, sweetness and plenty of character.
