This anaerobic natural coffee comes from the Lalesa site in Gedeb, Yirgacheffe, owned and run by Ephtah Specialty Coffee. Ripe heirloom cherries are sealed in barrels for nine days of oxygen-free fermentation, then moved to raised beds to dry slowly for up to eighteen days.
That extended anaerobic soak concentrates the fruit character of the cherry, giving the cup its layered sweetness. Grown under the shade of false banana trees at 2,150–2,200 masl, farmers on this site are paid on delivery and supported through Ephtah’s community and childcare programs.
