Brazilian Specialty Producer, Helisson Afonso, started exploring the nuances of coffee processing by embarking on a fascinating experiment, fermenting coffee from the same plot in two distinct ways to unlock its full potential. This sensational Natural (Big Bag Fermentation start from harvest to the mill, where the cherries are washed, floated, and separated the coffee into Big Bags (Aka 1T Bulk Bags). Over a 65-hour period, the beans underwent a transformative fermentation process. Though slow to start due to cooled cherries from washing, the fermentation rapidly progressed, reaching its peak at the 65-hour mark.
