This coffee was grown by Felipe Arcila at the farm Jardines Del Eden. This coffee was exposed to a dry anaerobic fermentation period of 72
hours with the pulp on. During this fermentation stage passion fruit pulp and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with passion fruit pulp placed amongst the coffee until the ideal moisture content was achieved. This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust
Felipe Arcila is one of the co-founders of Cofinet along with his brother Carlos Arcila. They are the 4th generation of coffee growers. Their father, Jairo Arcila, is a third-generation coffee grower from Quindío. Jairo told his sons that the coffee industry was not profitable because of the many economic challenges he had faced in the past. Because of this advice, Felipe and Carlos both pushed forward with their careers in civil engineering and travelled to Australia to continue with their master’s degrees.
