Sheyla’s father, Manuel Velloso started planting coffee on his property many years ago. Sheyla inherited Manuel’s passion for coffee and, with help from her husband, Marcus Heitor, she continues coffee production at Fazenda Colônia Agrícola. The couple purchased the farm in 1994. Previously, it had been dedicated to cattle raising and had only pasture for cattle. Sheyla and Marcus approached coffee farming with an eye towards environmental rejuvenation and, today, the farm has all the necessary permanent preservation areas, as well as a forest reserve. Cherry is harvested and processed on Fazenda Colônia Agrícola. Ripe, red cherry is placed in sealed barrels and fermented for 100+ hours. Following fermentation, cherry is laid on patios to sun dry. Cherry is raked frequently to ensure even drying.
