About this coffee

Tasting Notes: Dark Chocolate, Caramel Toffee, Blackcurrent, Blueberries, Complex Winey Notes

Yojan Perez has been around coffee production his entire life. First introduced by Yojan’s great- grandfather, farming and coffee cultivation runs deeply in the Perez family. Yojan witnessed and contributed to the practice of good agricultural management and learned how to increase his profitability and target the specialty coffee market. Yojan’s three hectare farm is surrounded by tall Eucalyptus and Laurel trees. These trees are imperative to the health and quality of his coffee, as they shade the understory allowing for the slow maturation of coffee fruit and promote a healthy soil microbiome. Yojan grows bananas, vegetables, and yuca for soil biodiversity and consumption, but also trades food among members of the cooperatives and neighbors. Yojan is thankful for the level of technical services, seed sharing and partnership Aroma del Valle has provided.
