This lovely washed coffee we are proud to roast is from the Matyazo cooperative and wet mill is located in the Matyazo sector of the Ngororero district in Rwanda’s Western province. With the help of Technoserve, a group of producers created the cooperative and built the washing station in 2009. The washing station services farms at altitudes from 1100m to 2200m. The washing station itself is located at 1719m. The wide range of farm altitudes of the farms makes that the washing station is operational during many months in the harvest season The lots are separated on purchase date at the washing station. Day lots are dried individually and cupped separately later on to determine their quality. These higher altitude farms contribute to Matyazo’s complex, crisp and tealike profile, with bright acidity and white peach flavours. Coffee producers in the region have an average of 150 trees. In total, Matyazo washing station receives cherries from 375 producers.
