100% Gamay from a single vineyard, Les Mines. Vines are 65 years old planted in pink granite. Wine is fermented semi-carbonic in concrete tanks with no added Sulfur. Aged 8 months in used foudres before bottling unfiltered. 500 cases produced.

Bright and Juicy is hard to do in Beaujolais, but cotton through his aging after a semi carbonic ferment does just that. To Match with Coffee and Wine, we believe a lighter natural coffee is in order. Your breakfast coffee, or post dinner party, or after your hangover belongs to this gem of Ethiopia Sibu Guji gives a great mix of the lighter grape flavours of a natural ethiopian, with the bigger body that you’ve come to expect with practised natural processing.


AOP Brouilly, the difficult Hill in Beaujolais

Pierre started in Beaujolais and then moved all over France to learn winemaking. His wines unlike a lot of Beaujolais , are aged in cement vs. a quicker release. Beaujolais usually known for less aged brighter reds, Cotton bucked the trend with some aging, allowing the vibrancy of the fruit to really shine through. In Addition to this, he has been purchasing land on the Brouilly hill, giving him better drainage and more sunlight, allowing more sugars and minerality through his wines.
