We welcome back the Black Winey Natural process from Hartmann estate, Panama, Every year we have had exceptional cupping profiles from this coffee and this year it shines and delivers once again and we are so exctied to have it back in our catalogue. Today, the third generation of the Hartmann family represented by Mr. Ratibor Hartmann is running the business. Ratibor Hartmann is one of five siblings that manage the farm while each sibling is in charge of a specific operation on the farm. There is a warm family vibe at this estate and you could tell that this family have lived together all there lives. The Black Winey process is similar to the Natural process that we’re all familiar with. Ripe cherry is picked, sorted and sent for drying. This Winey coffee is sun-dried or on raised beds to allow greater airflow during drying as the cherry which is still on the bean provides the opportunity for spoiling. The process gives coffee a fuller-body, some winey flavours, a sweeter profile with less acidity.
We love buying this coffee and when it lands its absolutely excites our team to roast in several different ways in order to bring out some incredible new flavours, This coffee is exceptional as a filter and really shows you the true quality of the cup but it also has a beautiful unique flavour profile as a milk based coffee.
