1-High Altitude Darjeeling

Temp-82°C

The altitude for growing this tea can reach 2,135 metres and the Chinese variety of the tea plant is grown as it can withstand the cold winters and the cool summer nights of the Himalayan mountains.

This tea has an exquisite muscatel character and flowery aroma which earns it the title of the champagne of Indian teas.

Brew for 3-4 minutes

2-Jasmine Pearls(White)smiley

Temp-(81-87 °C)

Chinese Jasmine “Pearl” Tea is made by tightly rolling fine, tender and pale green leaves and buds which are infused with the essence of fresh jasmine blossoms. After the infusing the flowers are removed leaving only the jasmine scented pearls.

The flavour of this tea is sweet, smooth clean and beautifully perfumed

Brew 2g of jasmine pearls in 225 ml of water for approx 3-4 minutes

3-African Rooibos

Temp- 82-93° C

This tea is from the African Red Bush and is an amazing tea. Rooibos is grown only in a small area in the region of the Western Cape province of South Africa. Generally, the leaves are oxidized, a process often, and inaccurately, referred to as fermentation by analogy with tea-processing .This process produces the distinctive brownish red colour if Rooibos for which it is famous.

The flavour is naturally sweet and slightly nutty and is best served with a slice of lemon and can be sweetened with honey. Traditionally it is not served with milk.

Rooibos is purported to assist with nervous tension, allergies and digestive problems and is caffeine free

Brew for 4-6 minutes

4-Cartel Vitality Tea-(Herbal)

Temp-71-77°C

Blend of Alfalfa, Calendula and Spearmint

Alfalfa-Is considered beneficial due to its high nutritional content

Calendula-Also called 'marigold', the calendula is an orange or yellow-coloured flower typically found in northern Mediterranean countries. Calendula has a tendency to bloom once a month or every new moon. Calendula may help detoxify and is thought to be anti-inflammatory and anti-bacterial

Spearmint- Spearmint tea benefits have been known for many years. The spearmint plant originated in the Mediterranean and was revered by the Romans for its ability to “stir up the mind”. It is a refreshing tea with a light aroma as well as being caffeine free.

Steep for 6-8 minutes

5-Earl Grey Tea-(Black specialty)

Temp-88-93°C

Earl Grey Tea was named after the 2nd Earl Grey Charles of Britain in the 1830’s

Earl Grey tea is not actually a type of tea but a blend of quality black tea infused with a distinctive flavour and aroma derived from the addition of oil extracted from the rind of the bergamot orange, a fragrant citrus fruit.

The bergamot gives a beautiful, fresh citrus flavour .For additional sweetness serve with honey .

Steep 4-5 minutes or to desired strength

6-Sencha Tea-Japan (Green)

Temp-71-77°C

bSencha is the most popular tea in Japan, and represents about 80 percent of the tea produced in Japan. The flavour depends upon the season and place where it is produced.SenchaTea is a Japanesegreen tea, specifically one made without grinding the tea leaves. The word 'Sencha' literally means 'decocted tea”, referring to the method that the tea beverage is made from the dried tea leaves. This is the opposite for example to Matcha Tea, which is powdered Japanese green tea and in which case the green tea powder is mixed with hot water and therefore the leaf itself is included in the beverage.

It is considered that the ideal colour of the Sencha beverage is a greenish golden colour. Depending upon the temperature of the water used, the flavour will be different, and this also is the appeal of Sencha. With relatively not too hot water, it is relatively mellow; with hot water, it is more astringent.

The process by which Sencha is created differs from Chinesegreen teas, which are initially pan-fired (and could probably, therefore, more accurately be called 'roasted' teas). Japanese green tea is first steamed for between 15–20 seconds to prevent oxidization of the leaves. Then, the leaves are rolled, shaped, and dried. This step creates the customary thin cylindrical shape of the tea. Finally, after drying, the leaves are fried to aid in their preservation and to add flavour.

The initial steaming step imparts a difference in the flavour between Chinese and Japanese green tea, with Japanese green tea having a more vegetal, almost grassy flavour (some taste seaweed-like). Infusions from Sencha and other green teas that are steamed (like most common Japanese green teas) are also greener in colour and slightly more bitter than Chinese-style green teas.

Sencha in Japan is drunk hot in the cooler months and usually chilled in the summer months.

To make Sencha tea, simply place 1½ teaspoons of the Sencha tea leaves in a teapot that is half-filled with newly-boiled water. Let the mix steep and soak for 3 minutes (steeping for more than 3 minutes results in a bitter-tasting tea). Discard the leaves and enjoy the drink.
