ETHIOPIAN GUJI NATURAL
Arriving in Sep 2013, this coffee has been the winner of mutliple awards including 1st place in a Eastern African Fine Coffee Association's "Taste of the Harvest" Competition. This coffee is collected from local farmers and brought to the Guji Mill for processing. This is a natural, unwashed coffee meaning that ripe cherries, after harvesting, are left to sun dry on raised African beds and no washing nor fermentation is employed.
ROAST STYLE : This coffee performs at all roast levels though in this case I have gone with a lighter roast as I am into fruit at the moment. In the roaster I have gone with the standard 14 minute profile. This creates a nice 'S' curve in the data, an extremely gentle roast with minimum heat through the caramelise stage.
CUP INFORMATION : The Guji has an extraordinarily clean-finishing, dried-in-the-fruit profile. It is super sweet yet very crisp: roses, nut, cocoa, molasses, raspberry, blueberries can all be found within the Guji. It’s balanced, with well-rounded acidity and a nice buttery mouth feel. Cartel recommends you to explore this coffee as a black coffee first either as a espresso or 50/50- 50% hot water with equal parts espresso, ensuring an explosion of sweet, pleasant fruity notes.
